This wine comes from 50 year-old vines, the legacy of our ancestors. We pay them particular attention, with very elaborate bud pruning, a doubling of the thinning-out process and the hand-picked grapes put into 20-kilo boxes to respect the grape. These north-facing vines are planted in the stony limestone soil of Caillottes.
tasting
A very pale golden crystalline colour with green hints. An exotic, very opulent nose, marked not just by notes of gentian, kaffir lime, passion fruit, ginger and acacia flower. The mouthfeel is ethereal, crisp then soft, with aromatic persistence.
Serving suggestions: a carpaccio of scallops and small spider Accras-acacia flower.
